Potatoes
Description and features
Originally from America and introduced in Europe only in the second half of the 1500s, potatoes are tubers that distinguish themselves from other vegetables. They belong to the Solanaceae family.
However, despite the volume of water, they cannot be defined as a vegetable. Furthermore, vegetables generally have simple sugars in their composition. On the contrary, potatoes contain starch, equal to 18%.
Despite the presence of a large number of varieties on the market, these are generally divided into four types: new potatoes, white-mashed potatoes, yellow-mashed potatoes and red-skinned potatoes.
