Endive Escarole
Description and features
Endive (Cichorium endivia spp) is a leafy vegetable native to the Mediterranean basin which, over the centuries, has rapidly spread and is now consumed and recognized all over the world.
It is part of the Asteraceae family and of the Cichorium genus, therefore it is a close relative of radicchio and catalonia.
During the winter months endive is one of the best vegetables around, being rich in nutrients. First of all it is rich in water, it contains up to over 90%. This means that it is also excellent as a diuretic.
